Fast Food Friday (VeganMoFo Day 5)


My BFF Kristi is coming down for the weekend, so of course, I'm having a dinner party tonight, so she can meet my Miami BFFs!  Having just returned from Austin, I'm in a Tex Mex mood, so I'm putting together a few recipes from Veganomicon (Baja Style Grilled Tempeh Tacos p. 96, Mexican Millet p. 102, and Banana Chocolate Chip Bread Pudding p. 251) and 500 Vegan Recipes (Refried Beans p. 282 and Salsa Fresca p. 81).  My friends have all been recruited to bring the Coronas, because I have plenty of limes.

So, for this Fast Food Friday, I want to talk specifically about the Salsa.  It took less than 20 minutes to get everything chopped, then after mixing it up, I gave it a few pulses here and there with my immersion blender.  And that's it.  Ready to nom nom nom.

OK, dear readers, time to get caught up on my VeganMoFo reading before I get back in the kitchen.  But before I go, I'd love to know what fun plans y'all have for the weekend!

  6. Thanks, Mo. I've found 500 Vegan Recipes to be kind of hit or miss, but this one was definitely a hit. :)
